Konda Kewum (Oil Cake)



Ingredient
  • 1 1/2kg White Rice Flour 
  • 400g Weat Flour 
  • 1 1/2L Kithul or Coconut Treacle 
  • 100g Brown Sugar
  • 100ml water
  • 3pods Cardamom 
  • Pinch of Salt 
  • Coconut Oil to Fry


Method
  1. Add treacle and brown sugar into a think bottom pan and cook in medium low heat until it boiled (do not over boiled).
  2. Remove from the heat and set aside to cool it.
  3. Mix rice flour and wheat flour together and add ground cardamom and pinch of salt.
  4. Add treacle into the mixture slowly and mixed it well. (Use the hand to mix)
  5. The mixture should be thick and drooping consistency. (To check, take a spoonful of the batter and drop it slowly back to the mixture. The batter should form pleats if the consistency is correct)
  6. Keep the batter to rest for 1 – 2hrs.
  7. Heat a round deep bottom pan with oil
  8. When oil is hot, pour the ¼ cup of batter to the centre of the pan; As it begins to fry and the centre rises, pour in a little more batter into the centre.
  9. Insert thin wooden skewer into the center of the batter and let the raw batter move up while hitting hot oil on the top.(hold skewer in left hand while oil spoon in right hand) 
  10. Fry until it turns golden brown. 
  11. Drain onto paper and serve.
