Diya Bath (Sri Lankan Style Wet Rice)


Ingredients
  • 1 cup cooked rice (preferably white rice)
  • 1.5 cups water
  • 1-2 cups coconut milk (1st milk)
  • 5-8 red onion (finely chopped)
  • 2 tablespoon lime juice
  • 5-6 Curry Leaves  (firmly chopped)
  • 1 teaspoon grated Maldive fish (optional)
  • 2-3 Green Chilies (chopped)
  • Salt to Taste

Method:

  1. Add the water to the rice and soak it overnight. 
  2. Next day morning, mix the other ingredients with the rice and add salt to taste. 

Tips:

  • Dry red chilies can be used instead of green chilies.
  • You can adjust the ingredients and thickness of the coconut milk used according to your taste.
