Thala (Sesame) Aluwa



Ingredients

  • 07 cups of roasted sesame seeds
  • 03 cups Roasted White Rice Flour (from soaked 4-5 cups of white raw rice or purchase rice flour from market)
  • 2 cups of Sugar
  • 3 cups of water
  • 3-4 cardamoms

Method
  1. Keep little amount of roasted flour & sesame seeds for dusting and coating.
  2. Place a deep bottom pan and boil the sugar and water until form a thick line and take out from the heat.
  3. Add ground cardamom seeds and chopped cashew nuts and stirring continuously. (This time will allow the syrup to little cool and help to keep aluwa in good white colour.)
  4. Mix the roasted sesame seeds and roasted rice flour together.
  5. Add the sugar syrup slowly to roasted flour mix and mix up well. 
  6. Sprinkle little amount of remaining rice flour & sesame seeds on a flat surface and quickly spread the mixture. (Thickness of the piece will make according to your need)   
  7. Cut the pieces before it get cool and separate from the tray and coat with remaining flour & sesame seeds.

This measurement enough for 25-30 Thala Aluwa pieces.



Thala (Sesame) Aluwa with Milkmaid

Ingredients

  • 01 small tin Milkmaid
  • ¾ tin Water
  • 500g Sugar
  • 150g Roasted Sesame
  • 45g – 50 g Margarine
  • 30g Chopped Cashew Nuts
  • 3tsp Ginger Preserve
  • 1/2tsp Crushed Cardamom
  • 2tbl Vanilla


Method
  1. Milkmaid, water and sugar, into a thick bottom pan and cook until thick. (make sure to continuously mix all the ingredients)  
  2. Add ginger preserve and margarine, cook for a few minute.
  3. Add roasted sesame seeds, crushed cardamom and vanilla and cook until ball consistency is formed.
  4. Wipe little bit of butter on flat surface and spread mixture quickly and sprinkle the remaining roasted sesame seeds on top.
  5. Cut the pieces before it get cool and separate from the tray
